Rib Eye/Rump Steak, Roast Red Onions & Rocket, Smoked Chilli Butter

Ingredients
  

Rib Eye or Rump Steak with Roasted Vegetables and Rocket Salad

  • 4 Rib eye or Rumps steaks
  • 2 Red onions
  • 1 Red pepper
  • 1 Aubergine
  • 2 sprigs Thyme
  • 2 cloves Garlic
  • 30 g Rocket
  • 100 g Smoked chilli butter

Smoked Chilli Butter

  • 250 g Butter
  • 1 bulb Garlic, roasted
  • 3 Chillies, roasted and deseeded
  • ½ tsp Xylitol
  • 2 tsp Smoked paprika
  • 2 tsp Cumin ground
  • 1 tsp All Spice, ground
  • 1 Orange, zest
  • 1 Lemon, juice
  • Salt and pepper

Instructions
 

Rib Eye/Rump Steak, Roast Red Onions and Rocket

  • Cut the red onion into quarters, sliced the aubergine and cut the red pepper into similar size pieces, then put them together with the thyme and garlic cloves in and oven tray, drizzle with olive oil and season with salt and pepper and roast in a hot oven until the onions are soft and have begun to colour. Remove vegetables from the oven and leave to cool.
  • Drizzle the steak with a little olive oil and season with salt and pepper. Grill to the desired degree of doneness and rest.
  • Place the steak in the centre of the plate and place a disc of chilli butter on top of the steak to melt. Combine the rocket with the roasted vegetables and place alongside the steak.

Smoked Chilli Butter

  • Soften the butter. Blend all the other ingredients into a paste and then add the butter using a stick blender. Adjust the seasoning.
