Every good story needs a hero. And every good hero needs a villain.
For about half a century, we’ve been told a good story. In this story, carbs are the heroes, saving us from heart attack, stroke, liver fat and hypertension. The villain is cholesterol. Seductive, saturated fat, oozing from that yummy piece of meat on your plate was feeding the villain cholesterol in your blood. Just like cold fat clogs up drain pipes, we were told, so cholesterol clogs up our arteries. Carbs, full of fibre, will scrub our arteries clean and lead us to a long, healthy, happy life. The End.
That was a really good story. Pity it was a fairy tale. Today, we further explore this Fat Fairy Tale: Fake Science Exposed.
